Egg Custard Pie - Mabel Carmack

4 Large Eggs slightly beaten
1/2 Cup granulated sugar
1/2 tsp vanilla
1/2 recipe plain pastry
1/4 tsp salt
3 Cups milk
1/8 tsp nutmeg

Combine eggs, sugar, salt and nutmeg. Add milk and vanilla. Stir until well mixed. Line pan with pastry, pressing bottom and edges so that no air remains under pastry. Pour in filling.

Bake at 450 degrees for 10 minutes. Reduce temperature anto 325 degrees and bake 30 to 40 minutes longer or until a knife inserted comes out clean.

Makes one 9" pie
